Valentine’s Day yummy decadence
Here’s a yummy vegetarian recipe I’m sure will be a hit!

Silken Chocolate Mousse:
(serves 6)I found this recipe in Spa Magazine and it is by Cal-a-Vie’s executive chef Steve Pernetti.
Here’s the yummy recipe:
Ingredients:
- 3 12-ounce packages of light, extra-firm silken tofu
- 1/2 cup raw cacao
- 1/2 cup plus 2 tablespoons pure maple syrup or agave nectar
- 2 tablespoons Kahlua
- 1 tablespoon plus 1/2 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 6 fresh raspberries and mint leaves
Directions:
To make the mousse, combine two packages of tofu, cacao, a half cup of maple syrup, Kahlua, one tablespoon of vanilla, and cinnamon in a food processor fitted with a metal blade. Process 7 to 10 minutes until very thick and smooth, then chill for 20 minutes.
Make a tofu cream by blending remaining package of tofu, 2 tablespoons of maple syrup or agave nectar, and 1/2 teaspoon vanilla until combined and smooth.
Spoon alternating layers of mousse and tofu cream into wine or champagne glasses, garnish with raspberries and mint, and serve.
